Becca's Hot Chicken Bean Dip

I had a few requests so I thought I'd post this. It's super yummy with tortilla chips!

2 pkg. 8 oz. Cream Cheese, softened (I use the 1/3 less fat)
1 carton 16oz. sour cream (I use the light sour cream)
2 cloves garlic, minced
2 cups cooked chicken breasts, shredded
1 can black beans rinsed and drained
3 roma tomatoes chopped fine (we also have used diced tomatoes, drained)
1 cup chopped green onions
1 T. fresh Basil (I use dried too....whatever I have on hand)
5 shakes Tabasco Sauce (I like it less spicy so I use the green Tabasco)
1/2 tsp. salt
1/4 tsp. pepper
1 Cup (plus) cheddar cheese

Mix all ingredients together in a large bowl and put in 9x13 baking dish. Bake in 350 degree oven for30-40 minutes until hot and bubbly. Serve with chips or crackers

Buffalo Chicken Dip

2 cans Chicken (15 oz each), drained - I use Costco canned chicken
2 blocks cream cheese (8oz. each)
Franks Buffalo Sauce, about 1/2 bottle (6 oz)
1/4 cup Ranch dressing
Cheese (cheddar, mexican blend, etc.)

Crockpot Version: Mix together canned chicken, cream cheese, ranch and buffalo sauce in a large bowl then transfer to crockpot.
Top with plenty of shredded cheese.
Heat on low for a couple of hours until the cheese in melted.

Oven Version:  Mix canned chicken, cream cheese, ranch and buffalo sauce together and put in an 9x13 casserole dish.  Top with plenty of shredded cheese.
Heat in a 350 degree oven until hot and bubbly and cheese is all melted, about 20 minutes.

Serve with tortilla chips, fritos or wheat thins.

Chicken Wings

Chicken Wings, split (as many as you want)

(HONEY LIME GARLIC DIPPING SAUCE)
¼ c. honey
1 tbsp. lime zest (1 lime)
1 tbsp. lime juice (1 lime)
2 cloves garlic, minced
¼ tsp. salt
¼ tsp. pepper

Flour, for coating
Oil, for cooking

1. In a large bowl, mix together all but the flour & oil.
2. Place flour in Ziploc bag, toss in wings, and coat.
3. In large skillet, fry wings in hot oil, at least 1” deep. After they are cooked, dip wings into the honey/lime/garlic mixture to coat well. Serve immediately.

*note*: try adding 1 tsp. soy sauce & 1 tsp. hot sauce to the honey/lime/garlic sauce. Mmmm.

BUFFALO DIPPING SAUCE - Can use a bottle of Franks Buffalo Sauce
8 oz. softened butter (1 stick)
8 oz. hot sauce

THAI DIPPING SAUCE
1 cup sweet chili sauce
1 Tbsp. soy sauce

Nieman Marcus Dip & Spread

6 slices of bacon, crisp fried & crumbled
1 1/2 c. shredded cheese
1 small pkg. sliced almonds
3-4 green onions, chopped
1 c. sour cream
1 c. mayo
1 tsp. lemon juice
1/2 tsp. garlic powder

Mix mayo & sour cream - add other ingredients. Mix & chill. Serve w/ crackers or wheat thins (reduced fat).
